Gary Usher announces Wreckfish pop-up details
Chef-restaurateur Gary Usher has launched a series of pop-up events in order to crowdfund for his fourth site, Wreckfish in Ropewalks, Liverpool.
Usher, a former Menu of the Year Catey award winner, is asking visitors to pay what they want for the food, with all of the proceeds going straight into the crowdfunding pot, set to launch in March.
Last month, Usher told The Caterer that he would need to crowdfund £200,000 in order to make Wreckfish a reality.
He said: "I don't think it's possible to raise that much, but I think there's a hell of a lot of fun and spirit involved in doing a pop-up in a derelict building. We would love to open in Liverpool - it's a stunning building and I fell in love with it straight away.
"We can do it. We know it will work and it will be busy; we have proved that with the other three, but we just haven't got any money for it."
Reservations will be limited to 30 people per day. Usher will be cooking on 15, 16, 17 and 18 February in the evening, and on 19 February for lunch.
The menu will include stone bass cerviche; venison with pickled white cabbage and mushroom; and chocolate tart, hazelnut mousse and honeycomb.
Usher owns three restaurants: Sticky Walnut, which opened in 2011 in Chester, Cheshire; Burnt Truffle in Heswall on the Wirral, which opened in 2015; and Hispi in Didsbury, Manchester, which opened in October last year.
