Former St John, Brawn and Rubedo chef opens Bristol restaurant

Former St John, Brawn and Rubedo chef Cosmo Sterck has announced plans to open a new European restaurant in Bristol.

Marmo, meaning marble in Italian, is a collaboration between Cosmo and wife Lily, who worked at Luca and Six Portland Road in London before managing Bar Buvette, which operated in the Bristol site where their restaurant will open.

Opening in August Marmo's menu will feature mussels and lemon sole from Cornish fishmonger, Wild Harbour; Tamworth pork from Gothelney Farm in Bridgwater; fruit and vegetables from Wilding Farm in Chew Magna; and home-made charcuterie, pasta and ice-cream.

The wine list will feature showcase organic, biodynamic and low-intervention European producers.
