Former Pied á Terre co-owner to open restaurant at Dabbous site

Mathieu Germond, former co-owner and restaurant manager of Pied á Terre restaurant, is to open a French restaurant at the former Dabbous restaurant site in Fitzrovia.

Ollie Dabbous and Oskar Kinberg closed the Michelin-starred restaurant last month following the closure of their casual dining restaurant Barnyard in January, ahead of a "major new undertaking" they are planning for next year.

Germond has planned a restaurant inspired by his upbringing in Noizé village in the Loire Valley region of France, with a menu based on seasonal ingredients and a rustic cooking style. A six-figure premium was secured for the lease, which has 14 years remaining and includes the ground floor and basement.

The new restaurant kitchen will be led by Ed Dutton as head chef, who has worked with Germond at Pied á Terre and Pied Nus. Restaurateur David Moore, owner of Pied á Terre and its sister restaurant L'Autre Pied, has also advised on the concept.

Davis Coffer Lyons acted for Ollie Dabbous; Restaurant Property acted for Germond.

Ollie Dabbous said back in February, when Dabbous was placed on the market: "We have been offered an amazing opportunity that enables all of us to grow and evolve. Naturally we are sad to be closing Dabbous, but at the same time we are all very much looking forward to the next chapter. It's a phenomenal site and we can't wait to get started."
