What was your first job in catering?
Kitchen porter when I was 14 in my local hotel, Whately Hall in Banbury

What do you normally have for breakfast?
Toasted crumpets with Marmite and Cheddar cheese and a large mug of coffee (only on my day off)

What's your favourite restaurant?
Paco Meralgo in Barcelona for proper Spanish tapas

Gin and lemonade with a slice of lime

What flavour combinations do you detest?
The use of vanilla in savoury food

What's your favourite cuisine? I love to eat Indian food

If you hadn't gone into catering, where do you think you'd be now? An RAF pilot or an archaeologist

hate the most? Raw chicken - I hate the feeling on my hands

Describe your ultimate nightmare A power cut at work and all of the fridges going down as the kitchen is 100% electric, no gas!

you most about the industry? Sometimes people take food too seriously; it's there to be enjoyed
