Brasserie Chez Gérard roll-out

Paramount Restaurants is to roll out a more casual, all-day version of its core Chez Gérard brand by converting a dozen of the 53 Caffé Uno restaurants it acquired last year to the new format.

It has been piloting the Brasserie Chez Gérard spin-off at a site in Cambridge since May last year. This will now be joined by a new branch in Cobham, Surrey, later this month, followed by a third branch in Chiswick, west London.

Paramount, which bought the Caffé Uno outlets from the Restaurant Group for £33m last November, has been experimenting with informal variations on its key Chez Gérard and Bertorelli brands.
