Philip Limpl has been appointed head chef of Levan restaurant in London's Peckham.

Levan was founded by Mark Gurney, Matt Bushnell and Nicholas Balfe, who are also the trio behind Holm in Somerset, which is due to launch a new crowdfunding campaign to add seven bedrooms to its offering.

Limpl trained at a cookery school in Feldkirch, Austria, aged 14. Since then, he has worked at numerous pop-ups across the globe, including at Colonia Verde in New York, Carousel in London, and Mochi in Vienna.

He was most recently head chef at Kona in Copenhagen.

As Levan celebrates its fifth year, Limpl will be adding Austrian, Japanese and Danish touches to his seasonal, nose-to-tail style dishes.

He will also bring back a chef's menu, which is set to change each month and is currently priced at £55 a head with an optional wine pairing for an extra cost.

The menu includes dishes such as fried pig's head and mustard; sea bream ceviche, leche de tigre and rhubarb; venison tartare, chicken skin and wild garlic; and choux bun, koji ice cream and hazelnut.
