Former Trullo chef and Barrafina GM open neighbourhood Italian in London Bridge

Former Trullo chef Matt Beardmore and Barrafina general manager Jay Patel have teamed up to open neighbourhood Italian restaurant Legare in London Bridge,

Legare will have 35 covers and serve a short, changing menu of seafood, sun-ripened vegetables and fruit grown throughout Italy.

Patel said: "The restaurant draws inspiration from the places Matt and I have worked at and travelled. We are not an out-and-out classic Italian restaurant, and do not pertain to be.

Pasta will be made daily in-house with dishes including tajarin with burro e salvia (butter and sage); handmade semolina-based pastas from southern Italy including orecchiette with fennel sausage and swiss chard ragù; and stracci with crab, chilli, garlic, saffron and pangrattato. There will also be a whole Scottish lobster taglierini dish created for two to share, available for pre-order.

Antipasti will include fett'unta of goats' curd and sobrasada, as well as a daily crudo offering dictated by day-boat fishing and seasonal oysters. Desserts will include signature homemade cannoli with seasonal fillings.

Beardmore added: "The menu is based on beautiful Italian, British and European produce with a strong focus on vegetables, fruit and seafood. We have taken influences from the best of what the different seasons offer throughout Italy and the wider Med, putting flavour and quality first."

Sommelier Cameron Dewar, of Elystan Street, will compile a list of predominantly Italian wines including natural and low intervention bins.

Legare will open on 14 October in Shad Thames.
