What was your first job?

I was a pot wash at the Angel pub in Blyth, Nottinghamshire

What do you normally have for breakfast?

The sandwich of champions - sausage and baked beans

What do you do to relax?

Eat food, watch films and sleep

Which is your favourite restaurant?

L'Enclume in Cartmel, Cumbria

What's your favourite hotel?

Hôtel Le Bristol in Paris

What is your favourite drink?

Orange squash, the cheaper the better

What's your favourite food?

Thai green curry

What's your favourite cuisine?

French

What flavour combinations do you detest?

Chocolate and passion fruit

Which ingredient do you hate the most?

Courgettes - I think they're bland

Are there any foods/ingredients that you refuse to cook with?

Tofu and avocado - I really don't like the texture of either and think tofu can be pretty tasteless

Which person in catering have you most admired?

JoÁ«l Robuchon - one of the best chefs there has ever been, for his drive and perfectionism

Which person gave you the greatest inspiration?

Michael Caines and my mum, of course!

Salt and a comfy bed

What irritates you most about the industry?

People not turning up for interviews

What's your favourite film?

I think I'd have to say The Shawshank Redemption
