TwoRuba Bar to launch at Hilton London Tower Bridge
TwoRuba Bar, a new all-day dining and drinks venue, is set to open at Hilton London Tower Bridge, this autumn following a £500,000 revamp of the Ruba Bar that previously occupied the space.
Featuring Regency-inspired décor paired with contemporary metal drapery, TwoRuba will aim to offer a members' club feel is expected to open on 2 September.
The all-day dining menu will be inspired by the fresh produce available at nearby Borough Market, with a focus on platters and smaller grazing dishes called ‘Elements', such as: pulled pork sliders with chili apple slaw; wings of fire with fennel salsa and piripiri dip; chorizo focaccia with aioli and flash fried king prawns with garlic yuzu emulsion.
The beverage menu also takes its cue from the local area, known for its gin production, and includes an extensive list of independent London and Bermondsey Dry Gin cocktails in addition to Champagne cocktails and spirits.
The venue will feature an intimate space called the Snug, suitable for drinks parties for groups of up to 20 people. Elsewhere in the bar, seating is relaxed and non-uniform, comprising sofas, high-backed and sculpted scoop chairs and modular island seating, in a colour palette chocolate brown, grey, copper and caramel.
The TwoRuba management team commented: "Spanning the divide between the traditional City of London and the more relaxed, creative Bermondsey, TwoRuba Bar seeks to unite the two, enticing professionals, hipsters, local residents and visitors alike."
