Matt Weedon appointed executive chef at Ellenborough Park

Matt Weedon has been appointed executive chef of the five-AA-starred, 61-bedroom Ellenborough Park hotel near Cheltenham, Gloucestershire.

Weedon joins the hotel this month, replacing David Kelman, who left the hotel in November 2016 to take up the role of executive chef at Andrew Brownsword's Old Swan & Minster Mill in Minster Lovell, Oxfordshire.

Weedon will oversee the hotel's entire food and beverage offering, including the Beaufort Dining Room, brasserie, and all conference and banqueting operations.

He won his first Michelin star as head chef at Glenapp Castle in Ayrshire, and later moved to Lords of the Manor in the Cotswolds in 2008, where he was appointed executive chef. The hotel's restaurant won a Michelin star under his guidance a year later. His most recent position was at the Lamb Inn near Witney in Oxfordshire, where he took over the tenancy alongside his wife three years ago.

Weedon said: "I'm thrilled to be joining Ellenborough Park at such an exciting time. It is an amazing time to be both a chef and a customer in the Cotswolds and there is a push towards more relaxed dining, but still with that high expectation of quality synonymous with the regions, people, and many eateries."

Oliver Williams, general manager of the hotel, added: "We have some exciting plans for the future of the F&B operation at Ellenborough, and could not think of anyone more qualified or equipped to join our dynamic and passionate team."

The hotel is a member of Pride of Britain Hotels' consortium of luxury, independently-owned UK hotels and a partner with boutique guide and booking agent Mr & Mrs Smith.
