Mark Sainsbury joins Hyatt Regency London – The Churchill as executive chef

A Hyatt stalwart of 25 years, Sainsbury has returned to the UK from Australia, where he has spent the past 12 years as executive chef of the Hyatt Regency Perth. He has also worked for Hyatt in India (Kolkata and New Delhi); Bali, Indonesia; and Kuala Lumper, Malaysia.

In his new role, Sainsbury will oversee the Montagu restaurant, which comprises the Cheese & Wine Corner in partnership with La Fromagerie and a Chef's Table for nine customers; the Churchill Bar & Terrace; and 11 event spaces.

He said that he has a clear British vision for the Montagu, taking inspiration from the hotel's namesake, Winston Churchill, and his love of fine food, and his personal chef Georgina Landemare, as well as celebrating British produce.

"As a Brit, with a strong passion for local produce and seafood sustainability, I look forward to celebrating the journey of every ingredient, to deliver seasonal, clean and beautifully presented food and secure the Montagu as London's go-to destination for modern British food," he explained.

Sainsbury has replaced Jef Foster, who was executive chef at the hotel for nearly four and a half years and has moved to the same role at the Grand Hyatt Mumbai in India.
