Fonab Castle appoints general manager ahead of opening next month

Fonab Castle Hotel in Pitlochry, Perthshire, has appointed Peter Sim as its general manager ahead of its official opening next month.

Sim, who joins from Maryculter House Hotel in Aberdeen, has previously headed up the team at Dunalastair Hotel, also in Perthshire, and the Cuillin Hills Hotel on the Isle of Skye.

Fonab Castle Hotel owner Joanne Clark said: "Peter brings a wealth of authentic Scottish hospitality experience to Fonab Castle as well as a great knowledge of Perthshire which will allow him to put the hotel firmly on the map of luxury destinations in Scotland.

"Our next step is to appoint the right head chef to lead our kitchen team. We are looking for someone with a real passion for fresh Scottish produce, who can create an inspiring and delicious menu."

Originally built for the Sandeman family, the port and sherry merchants, Fonab Castle is located on the banks of Loch Faskally. Aiming at five-star level it will have 31 bedrooms, including 13 in the castle and 18 in a modern addition. It will feature a panoramic, glass fronted restaurant with loch views, serving locally and internationally inspired dishes.
