Details of restaurants at Vintry & Mercer revealed

Vintry & Mercer, the 92-bedroom hotel which is to open in the City of London in early 2018, has announced further details of its three food and beverage outlets.

Located near Cannon Street tube station, the hotel is being developed on a site previously occupied by two recently demolished buildings. Anton Fedun, who is a director of the hotel's owner, FR Holdings, is also a director of Alfa Holdings, which owns the 111-bedroom Ampersand hotel in Kensington, west London.

The hotel's main restaurant Vintry Kitchen will serve a Mediterranean menu of small plates. It will be situated at the heart of the property with an open-plan, informal setting, featuring geometric tiled floors, marble-topped tables and leather banquette seating.

At the top of the hotel, the Mercer Roof Terrace will have a covered, glass-walled area as well as an outside space. The menu, with some dishes prepared in a charcoal oven, will highlight fresh British.

Meanwhile, DND (Do Not Disturb) cocktail bar will be located in the basement with a private entrance off Garlick Hill. Inspired by cocktail bars dating back to 1920's New York, the 60-cover space will serve barrel-aged and vintage cocktails, alongside a menu of small plates.

The hotel will also offer a breakout area with computers, three private event spaces, and a gym. It intends to embrace an eco-friendly culture through solar panels, a green roof, and plants and trees throughout the hotel.

Vintry & Mercer is named after two of the City's historic guilds: vinters, who traded fine wines, and mercers, who sold fine silks, Both trades will be reflected in the hotel's interior, which is being designed by Dexter Moren Associates.
