Craig Woodley appointed head chef at Apollo hotel
The four-AA-starred, 125-bedroom Apollo hotel in Basingstoke has appointed Craig Woodley as head chef.
Woodley has worked at a number of top restaurants such as Auberge Du Lac in Hatfield, under Jean Christophe Novelli; the four-AA-starred Regency Park hotel in Thatcham; the four-red-AA-starred Macdonald hotel in Windsor; and with the De Vere chain where he was part of a chef academy.
Woodley said: "The country roots and traditions passed down from my parents will never be far from how I cook today and I'm keen to encourage my team to prepare local items from scratch with less waste. In a landscape of mass-produced fare, I'm bringing a more authentic approach to Apollo Hotel - creating dishes that will draw visitors from around my home town and beyond."
Paul Fearon, general manager at Apollo Hotel, added: "Not only does Craig bring our lucky guests and diners his culinary expertise and top talent, fine-tuned at rosetted restaurants; he was originally educated on Basingstoke College of Technology's brilliant catering course, which we're keen champions of. Craig's passion for supporting young chefs echoes our own as he also assists local colleges and communities; helping young adults to begin their chef's journey."
