Many combi-ovens have only low-level waste-water pipework, forcing caterers to install expensive floor gulleys and fat-stripping processors to take away and process the water. European Watercare Systems' (EWC) new Drainflow waste water pump system will eliminate these inconveniences. The mobile unit, which measures 570mm x 202mm x 355mm, has a heavy-duty motor that can operate with water at a temperature up to 100°C from a level as low as 40mm from the floor and needs cleaning only every three months. EWC also offers two types of treatment to handle the water-related problems it reckons cause 65% of breakdowns on combi and steam ovens: Calcium Treatment Units and Reverse Osmosis programmes (which remove limescale, bacteria and steel-corroding chlorides and sulphates).
