Split pea, carrot and coriander soup
Ingredients
8oz yellow split peas
1 onion sliced
1 stalk celery sliced
8oz carrots sliced
1tbs fresh coriander chopped
2½ pints water
Salt and pepper to taste
Method
Wash the split peas and put in a large saucepan with the water. Add all the vegetables and bring to the boil. Simmer gently until tender - about 40 minutes.
Add half the coriander and season to taste. Liquidise and served topped with a sprinkling of coriander.
