3 soft roes evenly sized
1 hexagonal fried crouton 3 square
Creamed horseradish sauce
Salt and pepper
4fl oz white wine cream sauce
Season roes and sauté in a hot pan with knob of butter.
Heat white wine sauce.
Spread fried crouton with good layer of creamed horseradish place in centre of large plate.
Turn roes to finish cooking drain and place on crouton.
Add chives to white wine sauce pour a cordon of sauce around the roes
Sprinkle with freshly ground black pepper. Serve.
