Raspberry vinegar

Divide 1kg of raspberries into two. Pour 700ml good white wine vinegar over 500g raspberries. Leave 24 hours. Strain the vinegar over the remaining 500g fruit. Steep 24 hours. Strain the liquid, without pressing, through a very fine tamis or sieve. Bottle and sterilise.
