National Junior Chef of Wales showcases menu at gala dinner
The newly dubbed National Junior Chef of Wales 2007, Christopher Owen, recreated his winning menu at a gala dinner for 120 people last week.
The 20-year old chef, who won the prestigious national competition in February and works at the Castle Hotel and Nant Hall in Prestatyn, cooked his presentation menu at Coleg Llandrillo Cymru last Wednesday (28 March).
He served grilled fillet of lemon sole with buttered leeks and a prawn pithivier and oyster fritter; roast rack and poached loin of Welsh lamb with rosemary scented potatoes, carrot royal and braised celery; vanilla crème brullee, banana soufflé with plum and passion fruit coulis.
Owen will represent Wales at the World Association of Chef's Societies' Junior Forum in Dubai in May 2008.
