The boffins at the Pritchitts Knowledge Centre have slaved for 12 months to develop Millac Cappucino Milk, which the Lakeland Dairies supplier promises will create a consistent, smooth foam for perfect cappuccinos and lattes every time. Its secret lies with the added proteins that can grab more air to form bubbles during the foaming process, and the stabilisers that stop the foam breaking down before the required consistency has been reached. As it produces more foam than fresh milk, less is needed per drink. It can be foamed from both chilled and ambient states and has an ambient shelf-life of six months. Millac Cappucino Milk is sold in packs of 12 one-litre cartons.
