Huckleberries from Wild Harvest

An ingredient not often found in the UK, the huckleberry is most likely to be associated with Mark Twain's character Huckleberry Finn than with the wild berries of the Rocky Mountains. The new huckleberry season is about to start in the USA and will run until early November. Wild Harvest is supplying intense- and sharp-flavoured wild red huckleberries for the first time and suggests their use in making ice-creams and sorbets as well as sauces and jellies to accompany game.
