Hot, sweet and sour vegetable pickle

Ingredients

2lbs cauliflower florets
1½lb diced carrot
1lb French beans in batons
1½lb turnips diced
½lb onions chopped
2 pints mustard oil
2oz garlic paste
3oz garam marsala
2½oz chilli powder
2oz cumin seeds
3oz mustard seeds
800g molasses
800ml white vinegar

Method

Boil molasses in vinegar. Set aside. Heat oil add onion ginger and garlic paste. Sauté until light golden. Add spices salt vegetables and vinegar combination.

Cook for a few minutes.

Cool.

Stir regularly each day for 4-6 days to blend pickle well.
