The Convotherm Mini from Enodis has been designed specifically for caterers who lack the space for a full-size steam combination oven. The OES6.06, which can hold four 28cm plates and is priced at £4,400, is claimed to have the smallest footprint on the market with vital statistics of 627mm high x 515mm wide x 599mm deep, making it ideal for small snack bars or hotels that need to regenerate small batches of à la carte dishes. Running off a standard 13amp socket, the mini-combi will boil, roast, fry, bake or steam and has all the features of its larger siblings, including an easy-to-use Press and Go front panel and what Convotherm claims is the world's first Advanced Closed System with Crisp and Tasty to regulate moisture levels automatically.

Convotherm explains the Advanced Closed System by likening the sealed cavity to a room with door and window closed. The space heats up much faster without the constant heat escape of an identical room with door and window half-open, analogous to many other makes of oven. All Convotherm ovens have the closed system and are available in a choice of models with steam-generating boilers and in lower-cost boilerless versions.
