I like to eat the style that I cook, modern European, but I have a weakness for American barbecue

Heston Blumenthal for the incredible way he has built up his business and brand

My dog - I'm constantly jealous of her lazy days

Chefs walking out and then walking straight into another job

Who would you invite to your dream dinner party? Stephen Fry - smart, funny and a Norwich fan; Peter Kay - hilarious; Grant Achatz, for chef chat; my dad - we're a double act

Mark Poynton (Alimentum); Paul Foster (Tuddenham Mill); Russell Bateman (the Grove); Adam Simmonds; Ben Spalding; Murray Chapman (retired) - all great people for the bar afterwards as well
