What do you do to relax?
I support Norwich City and play golf, but both are unsuccessful in relaxing me at the moment

What's your favourite restaurant? Viajante, London

What's your favourite hotel? The Grove, Hertfordshire

What's your favourite drink?
Gin and tonic

Which ingredient do you hate the most?
Physalis, a pointless garnish

What flavour combinations do you detest?
Strawberries and poultry

What's your favourite book? Forager by Miles Irving

Which person in catering have you most admired?
Mum, for her relentless hard work over the past 25 years at the hotel

Describe your ultimate nightmare
Norwich City getting relegated, again…

What is your favourite cuisine?
I like to eat the style that I cook, modern European, but I have a weakness for American barbecue

Cast away on a desert island, what luxury would you take? A cold beer

Which person gave you the greatest inspiration?
Heston Blumenthal for the incredible way he has built up his business and brand

If not yourself, who would you rather have been?
My dog - I'm constantly jealous of her lazy days

What irritates you most about the industry?
Chefs walking out and then walking straight into another job

Who would play you in a film about your life? Buzz Lightyear

Who would you invite to your dream dinner party? Stephen Fry - smart, funny and a Norwich fan; Peter Kay - hilarious; Grant Achatz, for chef chat; my dad - we're a double act

Who would be in your fantasy brigade?
Mark Poynton (Alimentum); Paul Foster (Tuddenham Mill); Russell Bateman (the Grove); Adam Simmonds; Ben Spalding; Murray Chapman (retired) - all great people for the bar afterwards as well

If you had more time, what would you do? Spend more time with my wife and two daughters, and play more golf
