Nine restaurants awarded 2022 Michelin green stars for sustainability

Michelin has awarded its green star for sustainable gastronomy to nine restaurants in the Great Britain and Ireland Guide 2022.

Recipients of the accolade included Moor Hall in Aughton, Lancashire; Pensons in Tenbury Wells, Worcestershire; and Pine in East Wallhouses, Northumberland, which was also a new addition to guide, having been awarded one star this year.

Cal Byerley, chef and co-owner of Pine, told The Caterer receiving both a green and a red star nine months after opening was a huge achievement. The restaurant's sustainability credentials include running on biomass and solar panels, while it sources the majority of its ingredients from a 20-mile radius, as well as growing a lot of produce on-site using ‘no dig' methods which ensures carbon stays in the soil and isn't released as CO2 into the atmosphere.

"We've also bought native black honey bees onto the farm and a lot of our ethos is based around foraging, nose-to-tail cooking and preserving," adds Byerley. "The only thing we don't get within 20 miles is something like chocolate – which isn't from the North East."

Meanwhile, restaurant owner of Pensons, Peta Darnley, commented: "Pensons prides itself on its admirable ‘estate to plate' ethos. These Michelin awards are a testament to the talent and commitment of the entire team at Pensons and the Netherwood Estate. Where possible Pensons grows, forages, or farms much of its own produce and our kitchen garden allows chef Chris and his team to have the freshest ingredients possible, which is immediately noticeable in the flavours on the plate. It also eliminates packaging, food miles, and environmental ‘nasties'."

Newly awarded green stars for 2022 were:

  • Chapters, Hay-on-Wye, Powys
  • Marle, Heckfield, Hampshire
  • Moor Hall, Aughton, Lancashire
  • Oak, Bath, Somerset
  • Pensons, Tenbury Wells, Worcestershire
  • Pine, East Wallhouses, Northumberland
  • Terroir Tapas, Bournemouth, Dorset
  • Tillingham, Peasmarsh, East Sussex
  • Wilsons, Bristol

First revealed in 2020, Great Britain and Ireland saw the award celebrated for the first time at its Michelin Star revelation event in January 2021, with 23 restaurants receiving the accolade in total. The Michelin Green Star is given to restaurants which combine "culinary excellence with outstanding eco-friendly commitments" and recognises restaurants at the forefront of the industry when it comes to their sustainable practices and any restaurant in the Michelin Guide is eligible.

Winners of Michelin's Special Awards were announced yesterday: Michelin's Young Chef Award went to the Selby brothers of Evelyn's Table in London Soho; the Chef-Mentor Award went to Phil Howard, chef-patron of Elystan Street in London's Chelsea; SY23 in Aberystwyth was named Opening of the Year; Dale Dewsbury and the team at Restaurant Andrew Fairlie at Gleneagles in Auchterarder, Perthshire, won the Welcome & Service Award; and Isa Bal, part-owner of Trivet in London's Southwark, was awarded the Sommelier Award.

The 16 Bib Gourmands winners were announced last week with chefs and restaurant owners hoping the accolade will help attract new customers after a difficult trading period.
