Swiss-inspired Heritage launches in former Brindisa Soho site

Swiss-inspired concept Heritage is set to launch on Soho's Rupert Street in the former site of Spanish deli-cafe Brindisa.

Overseen by head chef Aarik Persaud, the site will offer a small plate menu with dishes including dry-aged steak tartare and lobster tart with roasted fennel; vegetable, meat or seafood fondue; rosti with maple-glazed Dingley Dell lardons; Tomette de Brebis and shaved truffles; and raclette with Cobble Lane charcuterie featuring 24-month ham, wagyu bresaola and saucisson.

Accompanying the 80-cover site's menu will be a 200-strong wine list curated by head sommelier Elena Serban. Persaud said: "We're delighted to be opening in the heart of the West End and introducing our unique concept to the capital.

"London offers myriad cuisines, but upscale Swiss food is totally underrepresented. We are looking forward to bringing an interactive element to dining through tableside grilling and fondue, but without comprising on quality. I am confident it will be well received by Londoners and visitors to the capital alike."

The opening follows the quiet closure of Brindisa's sixth outlet on Rupert Street on 1 January 2019 amid a period of consolidation and reinvestment for the firm.

Founded by Monika Linton and Ratnesh Bagdai as one of London's original tapas restaurants, the brand still operates in five locations across London, including its six-month-old outpost at Battersea Power Station and its other Soho site on Broadwick Street.

In a statement, a company spokesman said: "after an enjoyable three years, we confidently handed over the restaurant to new operators as we turn our focus to our other restaurants and future projects."
