Former Fera chef Dan Cox to open restaurant in Cornwall

Dan Cox, formerly executive chef at Simon Rogan's Fera at Claridge's, has taken on Crocadon Farm in St Mellion, Cornwall, where he plans to launch a restaurant later this year.

Run in partnership with Sean O'Neill of the Modern Salad Grower and Good Earth Growers, the space, a courtyard of stone buildings with a 120-acre organic farm which will grow food and rear livestock for the restaurant, will also feature a microbrewery and a pottery which will host ceramicists in residence. The site previously operated as a farm, community event space, bed and breakfast and sawmill for the past 12 years.

Rogan and Claridge's terminated their three-year partnership last month. It was confirmed that the restaurant would continue to be led by head chef and Rogan protégé Matt Starling, but with a new culinary vision.

Cox, also formerly head chef at Roux at Parliament Square and the 2008 Roux Scholar, joined Rogan's research kitchen Aulis in 2011.

Announcing the news on Instagram, he said: "The day has finally come, I have taken on the most amazing 120 acre organic farm and buildings in St Mellion, Cornwall. All in partnership with Sean O'Neill of The Modern Salad Grower and @goodearthgrowers we plan to build something truly incredible here, growing and cooking together as one, giving food experiences like no other."
