Paul Fuller becomes head chef at James Monro gastropub

Paul Fuller, 23, has become head chef of Liverpool gastropub, the James Monro. Having trained in food catering at Wirral Met College, Fuller started his career at the Lower Place restaurant at the Royal Liverpool Philharmonic Hall, where he worked as a commis chef under the guidance of executive chef Paul Askew.

He worked his way up to chef de partie before moving to Amber restaurant in Allerton, where he specialised in bistro cooking as chef de partie.

Fuller then relocated to the Philharmonic Hall's Rubato Café Bar, where he was promoted to head chef, before moving to Bistro Jacques in Hardman Street, where he worked as a sous chef, catering for more than 100 covers a day.
