During and after the foot-and-mouth crisis in 2001 there was a real shortage of sheep's milk. One side effect of that was that Yorkshire cheese company Shepherds Purse had to stop production of its soft ewes' milk cheese, Olde Yorke. The cheese is made to a traditional Yorkshire recipe but uses the French Coulommiers method of slicing thin layers of curd out of the vat and layering them in a mould, which allows the whey to drain out naturally. The result, cheesemaker Judy Bell says, is a soft, delicate texture with a crisp and creamy taste.
