I want to learn from a good pastry chef

Question

I am 18 years old and have been working in a hotel as a pastry chef for a year. I am starting a two-year pastry course shortly.

When the head pastry chef at the hotel left a few months ago, I was disappointed because I wanted to learn from a good pastry chef. Now I am running the section on my own. I have talked to the head chef about getting someone else but he can't find anyone because he doesn't offer enough money. Do you think I should look for somewhere else to work? Also I am not sure how much I should earn as a pastry chef running the section on my own.

As you are starting a two-year pastry course, I would recommend you get some advice from your lecturer who should be able to assist you in getting workplace experience that you will be more happy with. Your lecturer should also be able to help you ascertain a realistic salary based on the area you want to work in and your experience.
