The Rational Banqueting System is designed to enable a standard ClimaPlus Combi (CPC) oven to serve a banquet for as many as 1000 diners or as few as 19, using food cooked in its ideal "climate" (ie the optimum balance of temperature and humidity).

System components include a special plate rack, a thermal hood and (when using a countertop oven) a trolley as well as the oven. Typically, the chef cooks the food up to three days before an event, blast chills it and arranges it on individual plates. These are then loaded onto the special trolley and stored in the coldroom. When the chilled meals have been regenerated, they are either served immediately or stored under a special thermal cover which is designed to keep food in prime condition for 20 minutes.
