BACK IN 1994 Tony Larkin inaugurated a private diners club to encourage mid-week dining at the family-run restaurant in St Helens, Merseyside.

Now, once a month, up to 750 diners gather to enjoy the best that the chefs have to offer.

Specialising in European cuisine - classical French, Italian, German and English with a little Spanish thrown in for good measure - Larkins Restaurant is typical of locations where the range of equipment and surfaces demands a regular and efficient cleaning regime.

Tony chose a Robby 500 cleaning system from Osprey. It is an innovative machine which dispenses with the need for chemicals as it just uses tapwater converted to the power of super heated steam.

Cookers, grills, chargills, griddles, deep-fat fryers, extraction canopies, plastic clad walls and floors of terrazzo, carpet and tile, can all be submitted to the Robby 500's 86psi steam pressure at 150ºC. The broad range of accessories included with the Robby will reach even the most difficult nooks and crannies where dirt and bacteria can multiply.

Tony Larkin is well chuffed because using steam means he can dispense with detergents and hazardous chemicals in his crusade against grime.

The Robby also doubles as a hot water pressure cleaner at 110ºC and has many other uses, as Tony reveals. "We recently decorated a 21ft dining room with 14ft high walls. We wheeled in the Robby and stripped the wallpaper in a day."
