Emeny's new role will take effect on 1 July 2013. He is currently group managing director.
The 47-year-old joined the company in 1996 and joined the main board in 1998 before being promoted to managing director of Fuller's Inns in 2006. He became group managing director in 2010.
Prior to this he worked at Bass, having joined as a graduate trainee. He is also a non-executive director of Dunelm, the specialist homeware retailer.
Michael Turner, who became managing director in 1992, chief executive in 2002 and executive chairman in 2007 will continue as chairman of the group in a non-executive capacity.
Turner said: "Simon's record of success has been outstanding. He has delivered a first class performance during his time with Fuller's and I know he is the right person to lead the company on to the next step in its long-term development as a leader in its field."
Emeny said: "I feel proud to be appointed chief executive of a company based on strong values, quality, and long-term vision. I would like to thank Michael for his inspirational leadership and I look forward to continuing to work closely with him in the future."
