The team behind London restaurants Westerns Laundry, Primeur and Jolene is to open new venue Fitzroy in Fowey, Cornwall, in June.
David Gingell and Jeremie Cometto will open the restaurant in a Victorian former bank. Set across two floors interiors will take inspiration from the function-first Shaker movement.
Gingell said: "Having grown up in Cornwall, opening Fitzroy is going to be a return home where my love of food began. The menu will be a continuation of what we always do; uncomplicated cooking that allows the quality of the produce to speak for itself but with just a touch more precision.
"We're so lucky to be so close to the source of everything the kitchen will be using - we have seaweed, flowers, herbs, roots, right on our door step, fantastic sardines available just around the corner in Mevagissey and in the spring we can go and pick wild plants, fermenting them so we can continue to serve them throughout the year."
The menu will utilise local produce and daily-landed seafood. Dishes will include mussels escabeche and crab soup with cultured cream; cod with clams, cucumber and seabeets; spiced gurnard with shellfish sauce, potatoes and fennel as well as onglet with onions, garlic and croutons. Desserts will include orange and almond tart with strawberries and clotted cream as well as Beenleigh Blue with pickled pears.
The wine list will be a collaboration between Cometto, Steve Major and Mat Roberts and featuring classic and approachable bottles from smaller ethical producers as well as some older vintages. There will be locally brewed beers and ciders available on draft and the cellar will also be home to a selection of house made vermouths and soft selzers.
Cometto added: "We're excited to venture outside of London to offer a more focused and precise dining experience with more time and less pressure. The old bank will lend itself to a more classical feel compared to our London restaurants while the understated maritime beauty of the town of Fowey provides a relaxed and welcoming atmosphere, where we hope guests from the immediate locality and further afield can enjoy a comprehensive and original dining experience."
