Tony Parkin appointed as head chef of the Brickmakers Arms

Tony Parkin has been appointed as head chef at the Brickmakers Arms in Windlesham, Surrey.

 

Parkin started his career as an apprentice under chef John Campbell at the Vineyard hotel in Stockcross. He then moved to Copenhagen, where he worked for Michelin-starred kitchens at Kommandaten and Noma.

 

Upon his return to the UK, he undertook roles at Northcote, Restaurant Gordon Ramsay and Adam Simmonds at Danesfield House before becoming head chef at the Tudor Room in Great Fosters in 2019. He rebranded the restaurant as Tony Parkin at the Tudor Room, where he was given a Michelin star.

 

Parkin’s gastropub menu at the Brickmakers Arms is due to feature local ingredients, fresh fish caught on day boats as well as aged in-house meat.

 

The Brickmakers Arms is part of the Noble Inns Group, which also includes the Princess of Shoreditch, the Albion, Pig and Butcher, and Smokehouse in London’s Islington.

 

Barry Weller, founder and owner of Noble Inns Group, said: “We’re delighted to welcome Tony to the team. He brings extensive, hands-on experience in the fine dining landscape which will be invaluable in supporting our plans for the continued growth of the Brickmakers Arms and Noble Inns.”

 

Earlier this month, Parkin announced his departure from the Tudor Room to “focus on new projects”.
