Olive Tree Brasserie to open fifth site

Greek/Mediterranean restaurant brand Olive Tree Brasserie is set to open its fifth site next month.

A 110-cover venue is set to open on Dicconson Terrace in Lytham St Annes, Lancashire, the brand's second site in the area. The new restaurant will open at Bank House and have a team of 30.

Founder Dean Wilson opened the first Olive Tree Brasserie in Lytham St Annes in 2007, followed by a second opening in Preston, Lancashire in 2014. The third restaurant opened in Chester in July 2016, and a site in Stockton Heath, Cheshire, opened earlier this year.

He said: "We've been waiting for the right site to come along for us to set up in Lytham and we're beat off stiff competition from some fantastic restaurant groups to secure this spot. As soon as planning permission was granted, we were straight in and have already made really great headway."

The former NatWest bank building will be redesigned similarly to the brand's existing restaurants with industrial lighting, exposed copper piping and geometric patterned tiles. It will feature a central copper bar which will serve wine, beer and cocktails, and there will be live music on Friday nights and a private dining room and function space.

Wilson worked for McDonald's in the UK and Boost Juice in Australia, and worked in a Greek restaurant in his hometown of Lytham St Annes before opening Olive Tree Brasserie.
