Hummingbird Bakery reopening refurbished South Ken flagship and planning national expansion

The flagship Hummingbird Bakery on Old Brompton Road in London’s South Kensington will reopen this month with a new look and plans for national expansion.

The store will have a 'personalisation station' where guests will be able to watch bakers apply bespoke decorations to their cake while they wait. New bakes will include red velvet and white chocolate cookies, popcorn brownies and cornflake and coconut flapjacks, as well as a selection of cheesecakes.

Product trainer Gayle Clutterbuck said: “This year we’re excited to be launching an entire range of brand new American-inspired desserts as well as mixing-up some of our much-loved classics and bespoke celebration cakes.”

The store will be the first in Hummingbird’s stable to be refurbished as the brand “moves into its next phase of evolution” with plans for more store redesigns, one of which is set to include an open kitchen. Plans for expansion are also set to be announced later this year.

Chairman of the Hummingbird Bakery, Ziad Joumblat, said: “We are truly proud to share this next stage of the Hummingbird Bakery’s evolution. We have many exciting plans for 2022 with our sights set on national expansion, nationwide delivery, and even more delectable menu items. The reopening of our South Kensington bakery is just the first step of the journey.”

The American-style bakery brand was launched in the UK by Tarek Malouf in London’s Notting Hill in early 2004. The brand grew to six branches. The business and brand were acquired by Acropolis Capital last year through a pre-pack administration, securing the ongoing operation of its original Notting Hill site and branches in South Kensington and Spitalfields, while sites in Soho, Islington and Richmond closed.
