Former MasterChef: The Professionals contestant Callum Graham has been named head-chef of the Michelin-starred Bohemia restaurant in Jersey.
He replaces Steve Smith who, after seven years as head chef, moved to the one-Michelin-starred Latymer restaurant at Pennyhill Park, Surrey.
Graham, who reached the quarterfinals of the 2018 BBC show, has worked at the Lanesborough in London and the Michelin-starred Auberge du Lion d’Or in Geneva as well as the Le Celadon in Paris. He was also part of Smith’s team at the Bohemia when it won five AA Rosettes.
Owner of Bohemia, Lawrence Huggler, said: “We are thrilled Callum will be taking over as head chef at Bohemia. I have known Callum for a number of years and, having spoken with him at length and sampled the new dishes and menus he is planning, I am very excited for the next chapter of Bohemia.”
Graham, who has said he will bring a Parisian and Genevan influence to the menu while using fresh Jersey produce and seafood, added: “I’m really pleased to be taking over at Bohemia and am looking forward to introducing my new menus and style. I hope to continue to surprise and delight Bohemia customers over the coming years.”
Graham will begin his tenure as head chef on 10 February, on the same day the accompanying Bohemia Bar will be relaunched as the The Club Bar.
