The latest restaurants, bars and hotels to open their doors across the UK in June 2022

Every week new establishments open across the UK, facing the hustle and bustle of cities and countryside idyll. To help keep track, we have collected the biggest new openings from Land's End to John O'Groats.

Music charity B:Music is opening B:Eats, a café and restaurant in Birmingham. In London, Homeslice has launched a fully plant-based restaurant. Read more about what to expect from these new businesses below.

Here are the latest openings from this month.

The Spence

The Spence is an all-day restaurant at Gleneagles Townhouse, the first Edinburgh spin-off of the iconic Gleneagles hotel in Perthshire to open in its 98-year history.

The 33-bedroom hotel launched on 6 June in the former home of the British Linen Company and the Bank of Scotland.

Its main restaurant is overseen by head chef and Acorn Award winner Jonny Wright, who has returned to his native Scotland after 16 years spent cooking in London.

He was formerly head chef at Jason Atherton's Berner's Tavern and sous chef at Michelin-starred Evelyn's Table.

Wright's menu is described as modern and Scottish-inspired with a range of sharing dishes and desserts served on a trolley.

A central bar sits beneath a glass-domed ceiling with seasonal cocktails served alongside local whiskies, beers, spirits and wine curated by bar manager Stefanie Anderson.

B:Eats

Music charity B:Music is to launch a café and restaurant at Birmingham's Symphony Hall. It will serve breakfast, brunch and lunch and feature a sandwich menu and an evening offer is set to run alongside musical events.

Cord by Le Cordon Bleu

Culinary institute Le Cordon Bleu is to launch its first fine dining restaurant and café in London. The 90-cover restaurant will offer à la carte and tasting menus, with pâtisserie, sandwiches and salads sold in the café.

Homeslice by Symplicity

London pizza group Homeslice has launched its first fully plant-based restaurant using ingredients from chef Neil Rankin's Symplicity Foods.

The Cocktail Club

The first Welsh bar from the Cocktail Club is opening in Cardiff, offering boozy weekend brunches and drinks masterclasses. A mobile Cocktail Club Wagon and DJ truck will be driving around the city ahead of the opening.

Valderrama's

Chef James Cochran and the team behind London's 12:51 restaurant are to launch a 48-cover sports bar in London, serving fried chicken, frozen margaritas and Beavertown beers.

Tim Hortons

The Canadian coffee and doughnut chain will open its debut London restaurant on Canada Day (1 July). It will seat 100 guests and feature a drive-through and a free breakfast meal for the first 100 customers.

The Retreat at Elcot Park, West Berkshire

The Retreat at Elcot Park is the second boutique hotel opening from hospitality group the Signet Collection. Set near the market town of Hungerford in West Berkshire, 45 minutes by train from London, the hotel occupies a Grade II-listed, 18th-century building that was once the home of poet Percy Bysshe Shelley's mother.

The property is set within 16 acres and features 55 bedrooms, pan-Asian restaurant Yü, all-day brasserie 1882, an Orangery, a Whisky Library, complimentary pantries for guests on each floor, meeting rooms and private dining areas.

A Courtyard retail space in the hotel's grounds is home to a Bakery & Coffee House, hair and nail salon, and a Lay & Wheeler wine store, which sells 50 fine wines, including rare and collectable vintages.

Facilities at the on-site health club, the Signet Spa, include a salt flotation room, sauna, gym, outdoor infinity pool and three rooms offering treatments by ILA.

Inception Group's latest bar has opened opposite Claridge's hotel in London. A long bar is stocked with an ‘apothecary collection', where cocktail serves are measured out on weighing scales.

Bottle, Highgate, London

Wine and beer shop Bottle in Highgate Village has relaunched as a café and shop serving a casual grazing menu with produce from suppliers such as St John and vegan bakery the Female Glaze. Wine tastings and private events are held on Mondays and Tuesdays.

The Willen Dragon

The Brewers Fyre brand is to open its first pub since 2017, in Milton Keynes. The family-friendly site will offer an all-you-can-eat breakfast, outdoor bar, children's play area and serve a Sunday carvery.

Virgin Hotels Edinburgh

Virgin Hotels has opened its first UK outpost in Edinburgh's India Buildings, close to Edinburgh Castle. It has been designed by Virgin Hotels in collaboration with ICA Studio, Four-by-Two and Joelle Reid Interiors, with the aim of preserving the building's original features and adding contemporary characteristics. Visto Artwork organised the hotel's art collection, with Scottish-inspired pieces from local artists.

In its first phase of opening the hotel has unveiled 54 of its 222 rooms, the Commons Club restaurant and Funny Library coffee shop. Edinburgh-born executive chef Steven Wilson has designed the Commons Club menu to showcase contemporary Scottish seasonal cuisine.

The second phase, expected in autumn, will see the opening of the remaining rooms as well as all-day dining venue Eve and the Greyfriar's Hall event space.

A second UK Virgin Hotels venue will open in Glasgow later this year. It will have 240 bedrooms.

The Nici, Bournemouth

A luxury hotel inspired by the lifestyle of the glamorous US neighbourhood of Miami South Beach has launched in Bournemouth.

The Nici is the latest property from hospitality entrepreneur Nicolas Roach's Nicolas James Group, which also owns the Harbour Hotels chain. The hotel, formerly the Savoy, is undergoing a £25m refurbishment and the first phase has opened for guests.

The Nici has 73 bedrooms, including 10 luxury garden suites with outdoor hot tubs, a bar and restaurant with outdoor terrace, meeting and event spaces, and a garden and pool with private poolside cabanas. Families are catered for with a 13-seat cinema room, a children's games room and an outdoor activity centre with surfboards, beach equipment and games.

There is easy access to Bournemouth's sandy beaches via the hotel garden, where fire pits are lit during the evening. Visitors can also take a bicycle from the hotel's fleet along with a picnic and a grab-and-go beach bag.

The second phase of the development will see the opening of a 30m outdoor pool and garden restaurant, a spa and fitness centre, and a rooftop bar and restaurant.

Northallerton Inn

Inn Collection Group has transformed a former police station into a pub with rooms. The 30 bedrooms include five in former custody cells, and there is a 200-cover bar/dining area.

The Rabbit and the Seal, Marine Troon, Scotland

Restaurant and bar the Rabbit and the Seal has opened as part of Marine & Lawn Hotels & Resorts collection at Marine Troon on Scotland's west coast. Rusacks St Andrews' executive chef and MasterChef: The Professionals winner Derek Johnstone will be championing produce from suppliers in Ayrshire and across Scotland.

The restaurant, which can seat 78, is dipped in ultramarine, with large wicker chairs, sapphire blue velvet dining booths, lavish blue and green wallpaper, and coastal driftwood chandeliers. Views of the Royal Troon golf course and the Arran and Ailsa Craig islands are also in sight.

Afternoon tea is served every Friday to Sunday between 2pm and 4pm. The hotel collection is owned by Adventurous Journeys Capital Partners and the project was developed and operated by White Rabbit Projects.
