Silo to open in London in September

Chef Doug McMaster's zero-waste restaurant concept Silo will be opening in London this September.

Crate Brewery, which operates in Hackney Wick's White Building, launched a £500,000 crowdfunding campaign earlier this year to bring the until recently Brighton-based, sustainability-focused concept to the site.

Silo will open early evening for dinner with a regularly changing menu of 10-15 dishes such as smoked violet carrots with egg yolks and elephant garlic, and Jerusalem artichokes cooked on fire with Stilton sauce and pickles. Silo's wine list will be sourced from small, artisanal producers such as Sussex-based natural and biodynamic wine producer, Ben Walgate of Tillingham Wines, with cocktails designed by award-winning bartender Ryan Chetiyawardana.

On the weekends, Silo will open for brunch from 10am, with a menu featuring dishes such as porridge or coddled eggs, and juices made using wonky fruit and veg and kombucha brewed onsite by Jarr Kombucha.

Housed on the upper floor of the property, Silo's interiors will be designed by Nina Woodcroft and material conservationist Seetal Solanki, with an open kitchen with a burning fire at the centre, and a large counter made from recycled glass bottles. McMaster will also host workshops in the new events space next door to the restaurant.
