Chefs Fabien Spagnolo and Max Truel take on Crispin in London's Spitalfields
Fabien Spagnolo and Max Truel will permanently take over the kitchen at all-day cafe and bar Crispin in Spitalfields, London, following a sold-out chef residency.
The pair, who have worked together as pop-up concept Kitchen FM, will oversee a small plates dinner menu offered at the site, which is based in a purpose-built zinc and glass pavilion alongside Spitalfields market. The two bring combined experience from Pollen Street Social, The Ninth, Frenchie, Stem and The Corner Room at Bethnal Green Town Hall.
The regularly changing, seasonally focussed menu will focus on the flavours of southern France the two chefs enjoyed while growing up. Current menu offerings include beef tartare with cured egg yolk and black garlic; salmon with tomato consomme and seaweed; as well as roasted mushroom with tarragon broth and walnut. Dishes will be paired with the site's low intervention wine list, curated by Fernando Berry of Otros Vinos.
Launched last year, Crispin is the third site of Dominic Hamdy and Oliver Hiam, who made their names at Borough Market with Scotch egg company Scotchtails. The two also operate specialty coffee shop Lundenwic in Aldwych.
