Leandro Carreira, formerly of Londrino, has been named as executive chef of The Sea, The Sea.
Established by Bonnie Gull co-founder Alex Hunter, The Sea, The Sea will offer a combined fishmonger, deli and seafood bar on Chelsea’s Pavillion Road when it launches on 26 April. In addition to the food offering, the site will offer a range of seafood masterclasses and guest chef evenings from the likes of Ikoyi’s Jeremy Chan, UNA’s Martin Milesi and Edoardo Pelicano of Maos.
During the day the site will offer a fishmonger service selling high quality seafood from British fishermen and markets, including native lobster and langoustine, halibut, turbot and Ikejime mackerel. Stockroom and deli products including stocks, sauces and marinades, pies, ceviches, pickled and smoked seafood will also be available.
Meanwhile Carreira’s focus will be on the evening menus, when the space incorporates a seafood and Champagne bar offering tasting plates, bowls and platters.
Dishes will include Cornish sea bass crudo with crispy parsley sweet cicely; tender squid with pine nuts, sake and beach herbs and; poached Scottish lobster with olive oil and pepper.
It follows on from the chef’s work at Portuguese restaurant Londrino, in Bermondsey, which closed on 28 February this year, having opened in November 2017.
