Chef Mark Ellis' second venture Shippon will open its doors this Friday (25 May) at North Wales based-luxury holiday park, Plassey, near Bangor-on-Dee in Wrexham.

Built within an old cow shed, which formed part of a model dairy in the early 20th century, the building has been transformed into a restaurant, bar and lounge with original features such as old feeding troughs, which have been left exposed around the bar.

A wine tasting room will offer guests a bookable tasting experience.

The menu at Shippon will be inspired by the formula set out by Ellis' first restaurant Allium in Cheshire, Chester, which opened in February 2017; a main menu and a signature experience menu featuring dishes with nods to the Welsh heritage of Wrexham.

Ellis, who represented the North West in two series of the BBC's Great British Menu, aims to provide guests with "affordable luxury".

He said: "We will be using cookery techniques, old and new, to create a culinary experience, using local suppliers and produce where we can, to create stunning dishes that can't be experienced anywhere else, whether it is a light snack or lunch, steak and a glass of wine or a six-course tasting menu experience."

Owners of Plassey Holiday Park, John and Sarah Brookshaw, jointly stated: "We are delighted to be working with Mark on our new business venture. We always strive to offer our customers the highest of standards and a truly unique experience, whether it is visiting for a few hours, a day out or a stay at our Holiday Park.

"Mark's fantastic culinary background was exactly what we were looking for in a partnership to provide an affordable and bespoke luxury dining experience in our area. We can't wait to open the doors and welcome you all very soon."

Ellis, originally from the Wirral, started his career working in local restaurants before joining Simon Radley's brigade at the Chester Grosvenor. After leaving to embark on a cook's tour of the UK, he returned to take on the role of head chef at Rowton Hall, Chester, before moving to the 1851 restaurant at Peckforton Castle in 2007, where he stayed for nine years.
