Mark Sargeant to launch Tower of London restaurant with CH&Co

Mark Sargeant is to launch a restaurant at the Tower of London as part of his ongoing collaboration with foodservice group CH&Co.

The new venture, called Sargeant's Mess, is due to open in May at the Tower of London, which is operated by the independent charity Historic Royal Palaces.

The 85-cover, all-day restaurant will offer modern British seasonal dishes created by Sargeant and his head chef Simon Oakley.

Typical dishes will include smoked haddock kedgeree cake with poached egg for breakfast, while lunch and dinner menus will include Atlantic cod with dripping chips, mushy peas and tartare sauce, as well as roast red onion and Gruyere tart with celery and apple salad and walnut pesto.

There will also be a selection of roast daily specials such as pressed shoulder of lamb, minted potatoes and mushy peas, as well as crispy Gressingham duck leg with broccoli and mash.

An adjoining deli-café will offer grab-and-go options such as fresh soups, vegan salads and sandwiches served in biodegradable packaging.

In addition to the 85 covers in the restaurant, there will be 10 covers in the café and an additional 40 covers outside on a terrace, which will open in the summer.

The new joint venture between Mark Sargeant, CH&Co and Historic Royal Palaces comes about as a result of CH&Co's retention of its catering contract with HRP.

The firm unveiled an alliance with Sargeant (pictured with CH&Co chief executive Bill Toner, right), in November last year.

The chef turned restaurateur operates several venues in Kent and London, including Rocksalt and the Smokehouse in Folkestone, Plum and Spilt Milk at the Great Northern hotel in Kings Cross, the Duke William in Ickham, Kent, and the Wife of Bath, a Spanish-themed tapas bar and restaurant with rooms in Wye.
